Recipes below feature Knights' Pantry staples and were submitted by fellow Knights as part of our recipe contest (November 2022). Three fan favorites were determined by a student-body vote and those fan favorites were:

Prep Time: about 40 minutes
You’ll need: Baking dish, Oven, Can opener
Ingredients:
2 Tablespoons of honey*
1 can of strawberry preserves*
1 can of diced pineapple*
1 box of Vanilla Cake mix
1 stick of butter

Serves about 6
Prep Time: about 40 minutes
You’ll need: Baking dish, Oven, Can opener
Ingredients:
2 Tablespoons of honey*
1 can of strawberry preserves*
1 can of diced pineapple*
1 box of Vanilla Cake mix
1 stick of butter
Directions:
- Preheat oven to 325, spray 9*13 inch baking dish with nonstick cooking spray
- Spread preserves and pineapple on bottom of the pan, sprinkle dry cake mix over fruit.
- Melt one half stick of butter and pour on top
- Cut other half of butter into small pieces and place on top, bake for 40 minutes or until golden brown.

Meal: Cheesy Creamy Tomato Pasta

You’ll need: Bowl, stove top, sauce pans, measuring cup
Ingredients:
Pasta*
tomato soup*
heavy cream
spinach
butter
parmesan cheese
Directions:
- Boil water to cook pasta to desired softness
- In a saucepan combine 1/2 cup heavy cream and 2 cans of tomato soup.
- Add desired spinach and seasonings
- Mix in pasta and 1/4 cup parmesan cheese

- Recipe is for 1-2 boxes of pasta; varies depending on how much sauce you prefer

Method 2: Microwave safe bowl, Microwave, mixing bowl, measuring spoon, measuring cup
Ingredients:
28 Oreos (crushed up),*
1 tspn of baking powder
1 cup of milk
Directions:
- Mix up ingredients
- Method ONE: put it in a circular baking pan, put the pan in a 350 degree oven for 15-20min
- Method TWO: Pour the Oreo batter into a microwave proof bowl and microwave it for 5-6 mins

Meal: Spicy Tuna Kimbap

You’ll need: 2 bowls, fork/spoon to mix, knife
Ingredients:
Tuna*
Mustard *
Mayo*
Hot sauce*
Jalapeno, diced (optional)
cucumber
Rice*
salt*
seaweed
Directions:
- Take a bag or can of tuna, add tuna meat with no liquid from the can/package to a bowl.
- Add a tablespoon of mustard and two tablespoons of mayo to the bowl (with the tuna) and mix.
- Add a few drops of hot sauce and the optional diced jalapeno to the bowl, mixed with the previous ingredients.
- Take a cucumber and slice vertically into strips, this is for a crunch element in the sushi.
- In a separate bowl make the rice in the microwave (either premade or quick made with water) and once cooked, place in a bowl with a pinch of salt and mix.
- Take the seaweed and place cooled down rice, strips of cucumber, and the tuna mixture.
- Wrap the seaweed into a roll shape, and slice into sushi pieces. Enjoy!
Pro Tips:
- It does not have to be spicy! This is a great way to make your sushi craving on a budget! :)

Ingredients:
2 slices of bread*

- lay 1 slide of bread on a plate and place cheese of your choice on bread
- top with avocado and tomato slices
- drizzle balsamic vinegar over tomato and top with remaining slice of bread

Two scrambled eggs with 1/4 cup of 2% milk
1/2 cup of 12 month old aged shredded cheese
1/4 cup of everything bagel seasoning
1/2 cup of egg substitute
a pinch of garlic salt
1/4 cup of tricolor quinoa
Trader Joe’s everything bagel with light cream cheese
a side of French vanilla coffee.

Serves 1
Prep Time: about 15 minutes
You’ll need: frying pan, sauce pan, mixing bowl, measuring cups, utensils
Ingredients:

Peanut Butter*
Marshmallow Fluff*
Rice Krispie Cereal*
Honey*
Directions:
- Line a square pan with parchment paper
- Put honey in a small saucepan over medium heat and let the honey boil for about a minute
- Stir peanut butter and marshmallow fluff into the boiled honey
- Pour cereal in a large bowl and pour mixture of peanut butter, fluff and honey over top
- Stir everything well until all the cereal is coated and press the mixture into the square pan
- Cool the treats completely before slicing and serving
Pro Tips:
- Have fun and be creative with additions to the recipe! Fluff is optional but adds a great texture!
