Blackberry Parfait

Blueberry Parfait

There’s almost nothing better than summertime fruits! They are amazing all on their own, and the delicious blackberries that we picked at Red Hill Farm this summer were no exception. We managed to put a few aside to come up with this simple recipe that elevates them ever so slightly.

Serves: 1
Prep-time: 10 minutes
​

Ingredients:
  • Vanilla Pudding cup or 6 oz. vanilla yogurt
  • ½ cup blackberries, rinsed
  • 1/2 teaspoon sugar (adjust to taste)
  • Pinch salt
  • A drop of water or lemon juice
  • Fresh mint
  • Dollop of Cool whip

You’ll need: Tall glass, mixing bowl

Directions:
  • Sprinkle blackberries with sugar and a pinch of salt, then shake around to coat. You may want to adjust the sugar depending on how sweet (or not so sweet) your berries are, but don’t skip the salt. The tiny bit of salt will accentuate the natural sweetness of the fruit.
  • Sprinkle a tiny bit of water or lemon juice onto the berries and shake around again; you want to add a little moisture to the fruit, but not soak it, so a little sprinkle should really do the trick.
  • Let the berries sit for at least 5 minutes or up to an hour in the fridge so that they can macerate, or soften and release some of their juices.
  • In a tall glass, scoop in half of your yogurt or pudding, then scoop in half or your berries. Repeat the layers and top with a dollop of Cool Whip and a spring of fresh mint. Serve immediately.
Pro-tips:
  • If you are looking for a dramatic presentation, be sure to use a clear glass so that you can see the yummy layers you are about to dig into.
  • Experiment with all sorts of different berries- the sky’s the limit! If you use larger ones, like strawberries, just be sure to hull them and cut them into bite-sized pieces.
